In Denmark, a process lasting 7 years has just been completed, so wines from the town of Dons (in the vicinity of Kolding fjord) have finally earned PDO wine status. It is also the first time a consumer good product from Denmark has acquired a PDO status.
Dons Region, where vinegrowing is feasible, spreads over a total area of approximately 500 hectares. Dons appelation covers 43 hectares within the region, and currently it comprises 2 vineyards (Skærsøgaard) of 5.5 hectares in total. Wines that can be labelled Dons are sparkling wines. Since May 10th, 2018, the distribution of wines labelled Dons has been done in wine shops and retail stores in Denmark.
The first vineyards in Dons were planted in 2001, and in the last 10 years, detailed wine analyzes were carried out to determine distinctive features of these wines.
Compared with classic French champagne, Danish sparkling wines that are also produced by the classical method possess somewhat higher level of malic acid that is converted into lactic acid during malolactic fermentation. Therefore, the content of lactic acid in wine is 35% higher than in French champagne. Total acidity does not differ significantly (measurements showed only 4% lower value compared to champagne). This specific acid profile is explained as " the Nordic wine style".
Permitted varieties in the vineyards of Dons are interspecies hybrids: Orion, Zalas Perle, Solaris, Rondo.
